(Energy) Ball for Me

Small disclaimer: I will always choose chocolate over anything. I’m talking dark chocolate, cacao nibs, a warm chocolate chip cookie—I am there. And if that sounds like you, I promise this recipe is still worth a try! I mean, you’ll need some sort of palette cleanser between all that chocolate, right?

These lavender lemon energy balls are zesty, nutty, and floral. The lavender complements the coconut and lemon really well—I promise it doesn’t make the energy balls taste like perfume or soap. I personally love lavender, so I add extra to mine! This recipe uses simple ingredients and doesn’t require any baking, so you can finish making these in around 20 minutes. Plus, they’ll be your new favorite pick-me-up snack!

Total Time: 20 minutes
Yield: 9 medium-sized balls (can be stored for up to one week in the refrigerator)

Ingredients

  • 1 1/4 cup cashews

  • 1 tablespoon coconut butter

  • 1/4 cup shredded coconut

  • 1 lemon, squeezed

  • 1 teaspoon lavender, dried or fresh, flowering part only

Instructions

  1. Place all ingredients in a high-speed blender and blend until a sticky, well-combined mixture forms.

2. Roll the balls with your hands or with an ice cream scooper.

3. Refrigerate for 15 minutes.

4. Ball for me (with energy balls, of course)!
