Peanut Butter Vibes

A couple of weeks ago, I posted a photo of these energy balls and got some requests to share the recipe. I’ve been looking forward to coming up with a real recipe (not just me mixing things together haha) to share with you! I’ve posted a recipe in the past for lavender lemon energy balls and both of these are easy to make, filled with healthy ingredients, and look really cute in a mason jar (just saying). I also feel like half of the fun in making something involves sharing it with others. My college roomie, Olivia, and I are obsessed with energy balls and used to eat them all the time in our room, so I loved mailing these to her as a surprise. I’ve also enjoyed packing them up for my friends and family in the area and sharing this favorite snack of mine. This recipe was definitely a DIY experience for me and I’d love for you to make it your own as well. For example, you can swap out peanut butter for any other nut butter that you like, throw in some of your favorite dark chocolate (shoutout to Nikki, my other college best friend, for sending over Dandelion Chocolate!), add in a variety of nuts, etc. This recipe is yours to keep and to experiment with!

Total Time: 35 minutes
Yield: 45 small-sized or 25 medium-sized energy balls (shown in above photo)

Ingredients

  • 1 cup Medjool dates (about 8 dates)

  • 1 cup almonds

  • 1 cup rolled oats

  • 1/4 cup coconut flakes

  • 1/4 cup raw cacao nibs, semi-sweet chocolate chips, and dark chocolate pieces

  • 2 tablespoons peanut butter

  • 1 tablespoon honey

  • 1 tablespoon chia seeds

  • 1 tablespoon hemp hearts (shelled hemp seeds)

Instructions

  1. Process the dates and nuts in a food processor until they’re finely ground (about 2 minutes).

  2. Add the rest of the ingredients and process for one minute or until the mixture starts to stick together.

  3. Roll the mixture into individual balls and place them on a baking sheet.

  4. Store in the fridge.

  5. Enjoy!
